Cashew
Nut Stir Fry

Time: 4-5 minutes
Ingredients 1
jar Zesame Stir fry sauce (any favour)
80g Roasted Cashew Nut (unsalted)*
120g Courgette- 2-3mm thick diagonal slices
60g Carrot- 2-3mm thick diagonal slices
40g Red Onion- ½ cm thick strips
1 large Red or Yellow Pepper- ½ cm thick strips
1 tbsp cooking oil
*
To roast cashew nut (for full baking tray):

Spread
cashew nut evenly on baking tray

Put
tray in oven (fan assisted) at 150C for 10
minutes.

Give
the cashews a mix so that its evenly
roasted.

Roast
for approx. further 5 minutes at 150C.

Leave
the cashews in the tray and cool at room
temperature for approx. 30 minutes.

Store
excess roasted cashews in air-tight jars.
Cooking
-
Heat oil in wok or non-stick pan

Add in the vegetables,
stir fry for 3-4 minutes.

Add in the
roasted cashew nut and the sauce,
stir fry for a further minute
Best
served with fried rice or noodle.
