VEGETARIAN STIR-FRIES 

Why not try the following instead of meat in your stir fry?

Cashew nut 

Cooking tips: Use unsalted roasted cashew nuts. Add cashew nuts at the end of cooking- mix in with stir fry (for approx. 30 seconds) and dish is ready to serve.

Tofu 

The best tofu for stir frying is those that have a firm texture and don't break easily. The two main types are: 

a) Firm (texture) tofu- plain (white/off white) or flavoured 
b) Marinated tofu- the tofu is pre-fried and comes in small pieces. 

Both are available in most wholefood stores.

Firm Tofu - Cooking tips 

a) Cut into small rectangular pieces and add to stir fry towards the end after the vegetables and before the sauce. or b) if you prefer a more "nutty" flavour, pan-fried the tofu before adding to the stir fry. 

To pan-fried tofu: 

  • Cut tofu into small pieces (3cm x 3cm x 1cm) 

  • Heat cooking oil in frying pan on medium heat. - Add tofu pieces and pan-fried on low heat for approx.2-3 minutes or until light golden brown. Avoid moving tofu around during pan-frying. 

  • Turn tofu and pan-fried the other side for approx. another 2 minutes. 

  • Transfer tofu onto paper towel to remove excess oil. 

  • Add to stir fry at the end after the sauce. To retain shape of tofu, avoid excessive stir frying after tofu is added.

Marinated/Prefried Tofu - cooking tips 

This tofu is already cooked, so stir frying merely heats it up. Therefore, add it to the stir fry just before the sauce.
